    This salad is a show-stopper for your next BBQ. Salty feta pairs perfectly with the sweet melon and the peppery radish and arugula. Perfect for a side dish for four to six people.

    Melon, Snap Pea and Whipped Feta Salad With Chive Vinaigrette

    Ingredients


    Salad

    • 20g Arugula
    • 30g Radish (sliced)
    • 90g Baby Cucumber (sliced)
    • 150g Honeydew Melon (balled)
    • 80g Snap Peas 


    Whipped feta

    • 200g Feta
    • 50g Cream Cheese 

    

    Chive vinaigrette

    • 4g chives
    • 10g honey
    • 4g Dijon
    • 6g lime juice
    • 15g apple cider vinegar
    • 40g olive oil
    • 4g salt
    • 2g chili flakes

    Instructions 



    1. Thinly slice cucumber and radishes, using a melon baller scoop spheres out of the honeydew, split peas lengthways keeping the peas in the pod.
    2. Whip the Feta and the Cream Cheese in a food processor until smooth
    3. Place all the ingredients for the chive vinaigrette in a mason jar and shake until blended
    4. Spoon whipped feta on a platter and arrange melons and vegetables on top and drizzle vinaigrette.  Garnish with pansies, chives, and poppyseeds
